    Meat and dairy lobbies have influenced much of the consumer choices in my lifetime and this continues today. It is my hope that through education and awareness, there will be a shift in consumer choices to a more plant based diet.

    At times, this task is more challenging than I first suspected, especially now that I do quite a bit of work in front of a screen. I try not to eat in front of a screen often, but if I do, I find both positives and negatives. I tend to eat slower but I also tend to eat mindlessly. It's easier to keep snacking and overeat because I am distracted...

    Eating mindfully helps me to be aware of the experience of eating (e.g., taste, touch, texture), rather than simply eating to not be hungry anymore.
