Rachael Clarke 11/09/2023 10:13 PMI convinced my very carnivorous brother that vegan "chicken" strips taste better! He doesn't even want normal ones anymore :D I find them faster to cook, better seasoned, and crispier than real frozen chicken strips-
Rachael Clarke 11/10/2023 2:03 PMUnmeatables and beyond meat brand are really good, although I have found that you get more per dollar with the unmeatables! -
Susan Gibbs 11/10/2023 9:27 AMThat's a great feat to accomplish, it can be very difficult to sway a person who enjoys meat! What brand of vegan chicken strips do you buy?

Rachael Clarke 11/03/2023 6:05 PMUnfortunately, I drive to campus due to the poor public transportation system in my region, but I have been parking further from the buildings to get some extra steps and time outside! -
REFLECTION QUESTIONEnergy Choose Clean/Renewable EnergyHow might you be able to get others involved in advocating for the shift to clean energy?
Rachael Clarke 10/31/2023 4:49 PMBeing honest, I am not very good at advocating for these types of changes. I feel better advocating for changes that I am more knowledgeable of such as conservation and wildlife, so I will stick to advocating for that. Of course, if clean energy comes up in conversation, I am confident in saying that we should be using less energy sources such as coal and fossil fuels and switch towards solar and other greener power, but I'm not knowledgeable enough to add more to a conversation -
Rachael Clarke 10/31/2023 4:24 PMIt is so hard not to eat Halloween candy while it's right in the open in a big bowl. I do find the small bag size a good way to limit serving sizes though. Tonight is going to be a struggle to limit my refined sugar for this challenge!-
Susan Gibbs 10/31/2023 9:54 PMI agree, it's always been a big challenge in my house too! Thankfully the candy that was left is stuff that isn't my favourite so I'll be bringing it into work tomorrow. The trouble is some of my co-workers may bring in their leftover candy too.........🎃!!

Rachael Clarke 10/29/2023 5:21 PMI planted some of the russian red garlic I grew over the summer in my container garden today. It is a hardneck variety, so does not store as good as some other varieties you see in the store. I planted the extra I would not be able to use in the next few weeks so I can enjoy them again next year and prevent the extra from going to waste. I find it really interesting how the cloves need such a harsh dormant period over the winter and how they are able to survive this.-
Rachael Clarke 10/31/2023 5:43 PMThat's a great idea Janelle! I also love garlic scapes in stir fry, although I was given a whole grocery bag full this summer so I dried and powdered most of it as a garlic powder substitute -
Janelle Sztuhar 10/31/2023 9:56 AMThat's great to hear Rachael! A few years ago I planted garlic for the first time and it is a long wait, but so great to see them come up the next year. The scapes are great for homemade pesto!

Rachael Clarke 10/27/2023 3:25 PMI bought my pumpkin for Halloween from a farmers market that grows their own. I'm excited to roast the seeds with different seasonings! They make such a good snack and reduce waste that would otherwise go into the compost. My family tries to carve our pumpkins as late as we can so that I can still cook the pumpkins for my dogs. I peel them once cooked and freeze it in ice cube trays, so it lasts quite a while and helps if they have an upset stomach-
Susan Gibbs 10/28/2023 9:42 AMWow, I didn't think about pumpkin being used for digestive issues in dogs, I see that it works for cats too. I don't have any pets but I'll certainly pass that on to the pet owners I know ! 🎃 -
Abbey Murray 10/28/2023 5:57 AMWhat a great way to enjoy the holiday and support a local business at the same time. :)

Rachael Clarke 10/25/2023 8:59 PMI did my homework outside in the sun today. It was a bit cold, but my jacket and the sun helped a lot!-
Samantha Gibbs 10/26/2023 8:53 AMI love when it is sunny but cold! I love the contrast of the sun's warmth on my face and the chill in the air. It was quite windy, so hopefully your homework didn't blow away! -
Jasmin R 10/25/2023 9:08 PMThis is amazing Rachael, good for you for spending time outdoors!
I went for a walk today and it was great to be outside!

REFLECTION QUESTIONTransportation Improve a Bus StopIn what ways can you advocate for transportation systems which minimize environmental impact while also meeting human needs?
Rachael Clarke 10/24/2023 11:00 AMMy city has very poor cycling lanes, but has taken out a ton of parking from one street and made the road more unsafe by putting in concrete curbs which shrunk the lanes to make a cycling lane that hardly anyone uses. Since they did this, I have been meaning to get in touch with someone to complain about the waste of money and negative effects it has caused. Many other roads are frequented by cyclists more often and could use bike lanes painted onto the road (much cheaper than building bike lanes with concrete) do not have visible bike lane lines and are still dangerous for cyclists
