    in a community that doesn't have access to nutritious food, there will be much more illness and weakened immune systems. It can also cause imbalances in peoples bodies causing more depression and anxiety. In addition it will likely increase obesity.

    In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?

    My campus eco challenge is going really well. I definitely think about it now with my daily actions while I’m doing things. I usually log the day previous in the morning so that helps me take a good start to my day and reminds me to do all my challenges for the day!

    How could you incorporate other "R's" -- reduce, reuse, refuse, repair, repurpose, etc. -- into your lifestyle?

    I have 2 metal straws and 3 glass straws at my apartment in college and even more at home. I think it is simply a waste of money to buy plastic straws and I really want to save the turtles so this one is a no brainer and easy for me to do to help the environment.

    What do you do if you find yourself in the situation of needing a bag for items but don't have a reusable one with you or aren't allowed to use the one you brought? Carry things out in your hands? In a cart? Accept a disposable one? If you find yourself in this position often, what system could you put in place to try to create a successful habit of not using plastic bags?

    I shop at Aldi, so it is necessary for me to bring reusable bags. I always bring the same two and put them right back in my car for the next time I go. I always carry extras in my hands. One thing that I struggle with is having bags from other grocery stores after I go and not knowing what to do with them. I currently store them in a cabinet.

    It is going really well for me so far. I traveled this weekend so it was hard to do everything and remember to check in but the challenges are surprisingly easy to attain.

    Compost and recycle. I also break down all my cardboard and never throw away anything that isn’t rinsed.
