    Food Try a New Way to Prep
    Canning and pickling food is a great way to have delicious summer fruits and vegetables all year round. Just make sure to follow the canning and pickling guidelines from the USDA or another trusted source. What are some foods that you would like to preserve and enjoy later in the year?

    Okay, so, I didn't can or pickle anything...but I did make bread, which was one of the options, so I will answer this question after I talk about the bread.
    Ok. The bread.
    It literally made me cry when I made it, I was so stressed out, but I gotta say it came out absolutely FANTASTIC. Like, I was gigglin' and grinnin' it was so good. I don't know if you wheat-eating people (no offense) know this, but gluten-free bread is hard to get right, so it is that much more satisfying and surprising that my loaf came out pretty tasty first try. I honestly don't think I'm going to ever buy store-bought bread again unless I absolutely have to. It was 15 minutes of prep, some tears, and then an hour and 45 minutes of prove and bake time, for a wonderful loaf of bread. And, I know exactly what went into it.
    Alright, now the pickles. I am a huge fan of pickled onions, but I guess that's something that I can kinda get year-round here, so I would love to try and preserve mangos to enjoy later in the year. My mom and I love to make mango salsa, but we can't always find good mangos for it, so I think this could be a great solution.

    How can you incorporate other personal values (like quality time with friends or spending time in nature) into your exercise routine?

    I suppose I could invite my friends to go hiking with me and make it a habit to explore a new trail each week. The recent cold and snow are making it hard to get much outside exercise in though. However, since we're getting so much snow, I could ask some friends to help me go through the neighborhood, volunteering to clear people's driveways for them. This could help me get to know my neighbors better and help keep up the neighborhood as well. And shoveling the snow by hand would mean a tractor burning fuel wouldn't have to come by to clear them.

    Mindful eating is healthier for us than eating with distractions. How do your eating experiences differ when practicing mindfulness?

    I've tried to eat without distractions before this challenge, with some success, but I've noticed that since I've been doing it daily I'm more relaxed when I eat. It also allows me time to chat with my family while we're all not busy.

      Hi, Eden!
      It is super difficult for me to eat food without some kind of distraction! I usually go for TikTok or Youtube while eating, but trying to interact with the people around me and/or enjoy a moment of silence could be really good!
