It's interesting to know that the typical American discards 240 pounds of food each year, or about $1,500. I wasn't aware of how much that was, but considering my own actions such as allowing vegetables and fruits to spoil or purchasing in excess makes it real. That aligns with our course reading on sustainability and the effect of personal decisions. Rather than throwing that money away, I'd prefer to save it, as a budgeting student. It serves as a practical reminder to eat more mindfully and waste less. By meal planning ahead this could easily cut waste down to the bare minimum of just purchasing what I need just enough not to make the least amount of waste. My two meals of the day are fruit oat meal for breakfast and vegan tacos for lunch.

I do meal prep for most of my week and find this helps, like you said, if you only buy what you are using to meal prep. For me, it is a little challenging, as it is difficult to find a lot of variation when eating low carb and meal prepping it all, which is what I do. What helped me the most this week was adjusting my produce to what is seasonally available locally so I had a variety of produce to try. I agree most people do end up throwing away food, and it is difficult to eat produce before it goes bad if you purchase too much at a time. -
