    My EcoChallenge is going well. It has been challenging to find time in my day to spend an extra hour or so outside and the weather has also made this a little difficult. I do enjoy spending more time outside and I want to make this a priority. I also meal prepped my food for the week after I did my grocery shopping yesterday which will hopefully eliminate some food waste and save me some time on cooking later in the week. I've made sure to use my reusable water bottle and started turning off the water while I'm brushing my teeth. I've been good about only buying the ingredients I need but sometimes this proves to be a little difficult when I am buying food for one person and I feel like I can't eat all of one type of produce before it goes bad. I might look into freezing some of the excess so it doesn't go bad.
