Hadley Tims 11/08/2024 3:51 PMHello everyone! For my EcoChallenge actions, I decided to pick two of them: start weekly meal planning and take 5-minute showers. I have always wanted to start meal-prepping, but grocery shopping on my own was new to me at the beginning of the year and I'd never really found time to start. I decided that it was a perfect opportunity when I saw it on the action list. I decided to make a few specifications to this challenge: grocery shop for my meals each week on Sunday, plan for 3 meals a week (with healthy snacking allowed in between), and use up anything that might go bad by making a meal for my roommates. It went really well this week. I planned out what I wanted for my meals: 3 scrambled eggs and wheat toast for breakfast or a bagel and cream cheese, a turkey-cheese-spinach wrap with mixed vegetables for lunch to bring to school, and corn-tortilla beef tacos or for dinner. So far from this experience, I've learned that I need a little more variability in my food choices. This week was good, but next week I'd like to give myself more options. As for the 5-minute showers, I've learned that that is almost impossible for me to accomplish that unless I don't wash my hair. This action is to really challenge myself!
