The EcoChallenge that I picked was to compost more rather than throwing all food in the trash, it has been going well so far! The county landfill, has a designated section to cooking oil and compost drop off, and I've been able to drop off what I've collected of compost at least once this week. I've done a bit of research and learned that organic foods can take anywhere between 2 weeks and 6 months to decompose in compost.

Great to hear! But where exactly are you taking stuff? The landfill we just visited separates yard waste, but not food waste, unfortunately.
