    It has been over a week since I started prioritizing meatless meals. While sometimes it is hard to find options, I have found that I don't crave meat anymore which is great; it makes the challenge a lot easier. My concern is mainly about where to get protein. Let me know if you have any suggestions!

    Although none of the challenges I chose were electricity-related, I did add a sign in the dorm encouraging my suitemates and myself to remember to turn off the lights. Hopefully, it works!

    It is definitely hard to find a variety of vegetarian or vegan meals, at least in the South 40. However, the few options I did try today were delicious and I felt good about my decisions. Every meal I ate felt more intentional rather than grabbing something to go and that made me appreciate and enjoy eating more. I'm excited to continue!
