REFLECTION QUESTIONFood Zero-Waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?
Morgan Mahoney 10/25/2023 9:22 AMFor potatoes, if I were to make mashed potatoes I would obviously need to skin the potato. Instead of throwing away the potato skins, I could use the potato skins to make a different meal or snack. I would maybe get some cheese and sour cream and chives and put it in the oven. -
Morgan Mahoney 10/24/2023 11:11 AMI chose three goals to do with food because I feel like most of the goals I made will be very attainable for me to achieve. For example not eating as much meat or cutting back on some dairy products. Also meal planning so I am not wasting food.
