    Mindful eating is healthier for us than eating with distractions. How do your eating experiences differ when practicing mindfulness?

    When I practice mindful eating, I notice that I eat a lot slower than I usually do, and am able to reflect and plan for my day rather than “doom-scrolling” on social media.

      I love you insight on mindful eating and appreciate your personal perspective. I have found that I have a similar experience when I focus on my plate instead of a screen and prevent waste.

    In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?

    This is a very interesting questions. For lunch today, I made a jacket potato with a Yukon gold potato, and some veggies on the side. Everything that I did not use, (which was very little) I was able to discard into my compost.

    Today has been going really well. I did not have school or work today, so I was even more intentional about my goals and challenges. I think the most difficult part of today so far was being mindful surrounding eating and watching television at the same time. Other than that, I have been successful in all other areas!

    So far, I have consistently completed three days of mindfulness towards my eco challenge, and it feels great. I can make a positive impact with small changes.

      That's great! It's almost a form of some peace and mind with your self, it makes you feel good knowing your constantly contributing to the good of the planet!

    If we are not consistently practicing happiness, why would we even care about living in a better world? From my own personal experience, happiness is an inside job, and to blossom and care for others/our planet we have to take care of ourselves first.

    I made breakfast this morning before work, intentionally zero waste. I made my own bread and used avocados and eggs that I had purchased from the local PG farmers market yesterday. It was delicious!

    I have mediated daily for the past 30 days, and it’s a shame that I have not checked in on this platform, however I am dedicated to submit my progress for the next couple of days. Mediating for me is like therapy, and in doing so allows me to slow down and take note of what is important to me.

    My environmental health, community health, and personal health intersects mainly in my workforce, and at school (where I spend the majority of my time). I notice that environmental health is ruled where there a lot of people/animals, as well as community. My own personal health can be dictated if I choose to protect myself among those areas.

    So far, I am not pleased with how much own eco challenge is going, manly because I forgot to document my progress daily. However, even though I only have a week left to check in, I am dedicated to finish off strong and check in with myself and this platform for a generous amount of time.

      Evie, I am in the same boat as you, out eco challenge has been on my mind consistantly yet I have forgotten to log my progress. I think it is great that you have looked into the different waste sites in our area. Back in my home town there is a dump just 20 minuntes outside of the city.
