Normally I walk inside at the gym, so I am choosing to do this outside instead. I also buy a lot of my own groceries, and limit my spending pretty well already but would like to keep it simple as possible without wasting food.

Today was one of the first colder days of my walks outside. My spending for this week should stay low as I got a lot of my groceries last week.

Today I ate yogurt for breakfast!

This morning I ate a bagel to avoid eating meat, and yesterday I washed my laundry with cold water!

Eco challenge did not go to well today, completed my "reusable water bottle" challenge, but not my "get out in nature" one (had a lot going on today and did not get the time to spend time in thr outdoors)

    Simplicity
What did you notice in implementing this challenge? Was it hard to choose other activities over screen time? How did you decide to spend your time?

My initial thoughts on implementing this challenge were that I was worried I would either not be able to find something that was challenging or that the goal/target would simply be extremely unlikely for me to accomplish. However, after finding the screen time challenge I realized that I'd found a solid challenge that was reasonably achievable, yet still quite challenging for me to do. Today I went to a LinkedIn presentation today on how to professionally present yourself, I also ended up yapping with my sister instead of going back to my dorm while we had dinner together. So overall, I'd say today was probably my easy event day as I had a couple of things that I had (kinda) scheduled today.

    Health
How does eating more fruits and vegetables and less meat positively affect yourself, other people, and our planet? What fruits or vegetables did you try this week, and which was your favorite?

    Jenna Spies 11/11/2025 9:34 PM
While both the agricultural production of fruits, vegetables, and meat produce carbon emissions, agricultural plants produce far less than meat production does. Limiting the amount of meat one consumes similarly reduces the amount of carbon emissions a person creates, as the majority of their food is comprised of less carbon emissions. Doing even tiny daily tasks or goals to minimize emissions can help to prevent the further acceleration of climate change as well as global warming, as farm animals, especially cattle, produce a rather immense amount of methane.
So far this week (including the weekend) I've had spring onion, baby corn, broccoli, carrots, lettuce, apples, raspberries, cantaloupe, honey dew(I think that's what the green melon is called), pineapple, tomatoes, jalapenos, lime, lemon, and oranges. I think my usual favorite would be either pineapple or raspberries, but the salsa I had over the weekend was really good. So I guess if I'm going off of the main ingredient, then tomatoes.

    Waste
While water bottles are needed for health and safety in certain places, we can do more to reduce the unnecessary use of them. What are the barriers to you using reusable bottles and tap water instead of bottled water? How could you make this a permanent habit?

    Brooke Carpenter's avatar
    Brooke Carpenter 11/11/2025 2:40 PM
One barrier would include how my bubbler is sometimes on the red level (unsafe drinking water), but when that happens I usually try to find a different bubbler. I could make this habit permanent by never buying plastic water bottles again or accepting them.
  • REFLECTION QUESTION
    Nature
Rachel Carson said that we need the beauty and mysteries of the natural world for our spiritual and emotional development. Does that ring true for you? What are the implications for a culture that spends most of its time indoors?

    Brooke Carpenter's avatar
    Brooke Carpenter 11/11/2025 2:37 PM
Yes I believe that rings true for me. Being in the outdoors helps support emotional sustainability and a sense of connection to the outside world. When staying indoors, I tend to become more stressed with myself, feel more disconnected, and I believe it makes others feel like they do not have to "protect" the natural world.

    Energy
How is electricity generated where you live? How does it impact the environment, animals, and humans?

It is generated by steam as well as purchased power from the city. The power purchased from the city may be created in a way that may be harmful to the enviorment.
