    Walked to the gym again and meal prepped lunch and dinner. Showers under 5 minutes

    Turns out I did the whole eco challenge but never joined the group. Some actions were a lot harder to complete than others. It was fun!

    In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?

    For potatoes, if I were to make mashed potatoes I would obviously need to skin the potato. Instead of throwing away the potato skins, I could use the potato skins to make a different meal or snack. I would maybe get some cheese and sour cream and chives and put it in the oven.

    in a community that doesn't have access to nutritious food, there will be much more illness and weakened immune systems. It can also cause imbalances in peoples bodies causing more depression and anxiety. In addition it will likely increase obesity.

    My Eco challenge has been going very well. I have been saving a bunch of water solely from brushing my teeth without running water.

    Transportation Walk Instead
    Half of all trips made in the US are three miles or less; 72% of them are driven. Does this statistic describe your own transportation habits? If so, how might you incorporate more muscle-powered transportation in your daily life?

    In La Crosse, it seems like everything is 3 miles away or less. I try to walk everywhere I go unless I need to carry something like groceries.

    A lot of times the skin of the vegetable is where the best nutrients are. One of my favorite meals is mashed potato’s and I always leave the skin on.
